10 minute Chocolate pudding in one pan

Ingredients

1 cup whole milk

2/3 cup heavy cream

1 tbsp unsalted butter

3 tbsp cornstarch

2 tbsp cocoa powder

1/3 cup sugar

1/2 tsp vanilla

1/4 tsp salt

180g total of Milk and Dark chocolate slabs








Method

Add all ingredients to a large nonstick saucepan. Break the chocolate into pieces.

Place on the stove on low heat, and use a whisk to gently stir and cook the pudding until the butter and chocolate melts and all ingredients are combined. The lumpy look in the beginning will come together as it cooks.

Keep cooking and stirring on low heat until the pudding comes to a boil. After this point, it will start to thicken up quickly. Keep an eye on it, and cook until the pudding feels reaches a custard like consistency (thick but still pourable). Remove from the heat. The total cooking time should be around 8-10 minutes - if the temperature on your fire place is kept at around mark 5.

Strain the pudding to remove any lumps. Pour it into buttered individual cups or a buttered dish/mold. It will turn over easily if the dish is buttered.


If serving warm, serve right away. I covered it will cling film so that a film does not form on top of the pudding (it will be a semi-set consistency, not fully firm) and I placed in the fridge for 2-4 hours until the pudding sets.

You can garnish with Fresh Berries/sliced Bananas with custard/White chocolate shavings or with Raspberry/Strawberry puree or Passion fruit puree.

NB: depending on how rich you want the pudding. You can use a mixture of milk and dark chocolates based on your preference, do not use more than half the dark chocolate as the pudding will be too rich.
