Asparagus Soup


Ingredients

a bunch of asparagus

2 potatoes

1 large onion

a spoon of oil or a little butter

1 chicken bouillon cube

pepper salt to taste

Water


Method

Rinse the asparagus and break off the ends of the stalk - when you bend it - it breaks off -Throw away these pieces. Cut the balance part into 1 inch pieces. Wash and peel the potatoes and cut into cubes. Peel the onions and cut into slices. (You can add garlic pieces to the soup but I don't as my grandkid wont drink it if there is pepper or garlic)


Take a saucepan and put in the oil/butter and when warm add in all the vegetable and keep turning till nicely fried. Do not burn them. Then break in the soup cube, add pepper and cover with water and bring to a boil. Reduce heat and check if the potato is boiled. Off the fire and then carefully put a spoon full at a time to a blender. Do not fill blender to the top, Then blend on full and keep a strainer on a bowl or saucepan and strain. If you have blended it well there are no pieces left in the strainer. Continue blending till you finish all the soup.


Once strained taste to see if there is enough pepper and salt.


et Viola! a very tasty Asparagus potato soup.


NB: I never add milk or cream but you can if you wish to.
