Aubergine for Air Fryer


Ingredients

1 kg Aubergine

or any amount of your choice.

a dusting of turmeric

a sprinkle of oil


Method

Wash and dry the aubergines. Cut off the stem and cut it into 3 and then slit lengthwise. When you have cut about three Aubergines you could put in a sprinkle of turmeric and then place these in the basket of your air fryer, try to keep them in a single layer, sprinkle a bit of oil and cook on 160 for around 25 minutes,



Now your Aubergine is ready for use in either a Curry, Salad or Moju/pahi These can be put into a bag and kept in freezer till needed.


NB: Do not add salt before frying as it will get soggy and not fry properly. If you are deep frying you could add the salt and turmeric before frying.
