Baileys & Vanilla Fudge

Ingredients
250g condensed milk
2 tsp vanilla extract
80 ml Baileys (see Note at bottom)
400 g white chocolate
Method
Butter the mould and keep aside.
Then Finely chop the chocolate and I grated in my food processor -
keep aside till needed

In a pan warm the condensed milk, vanilla extract and the Baileys. Add the grated chocolate and let it melt for around 3 minutes on a low heat.
Stir once in a while. When the mixture has got together add the fudge into the prepared mould and refrigerate for around 2 hours.

Turn the fudge over onto a tray and cut into small squares with a sharp knife.

Once the fudge is ready it does not need to be kept in the fridge.
NB: Please note if it says 80 ml of Baileys don't put more than is needed. I wanted it to taste more of Baileys so added two 50 ml bottles instead of 80ml - It took me four days to set!!!
