Fish ready for breadcrumbs
Ingredients
A handful of prawns
A slice of seer fish (king fish)
A slice of cod fish or what ever you like
A carrot
A courgette
Capsicum chillies
Onions
Fish stock
Pepper /salt
Corn starch
Bread crumbs (Japanese or Thai) or coarse bread crumbs
Grated cheese
Chopped parsley
Method
In a saucepan put in the fish stock, this can be either fish cubes or ready made stock.
Add the washed prawns, wait till cooked then drain out and put into a baking dish - then add the seer fish cut into cubes without bones and also the cod cut into pieces. Boil and then drain.
Add the carrots cubed, the courgette cubed and cook till boiled. Lastly add the capsicums and the onions and then drain into baking dish. In to the stock add a bit of flour or corn-starch and thicken it. Add salt and pepper. Pour over cooked fish. Now the dish is ready for baking/grilling
Take some bread crumbs into a bowl. Add grated cheese and finely cut parsley top with butter and put under a hot grill.
