Ingredients
8 cups mixed greens
1 cup raspberries
1 cup strawberries
1 cup blackberries
1 cup blueberries
1/2 cup cinnamon pecans/
almonds
1/8 cup feta cheese
Method
Wash and dry the berries and greens. Toss berries, cinnamon pecans/almonds, and feta cheese over the mixed greens. Top with the Raspberry Vinaigrette Dressing (recipe given below), or any dressing of your choice.
This recipe makes 4 large dinner salads or 6 to 8 side salads.
Raspberry Vinaigrette Dressing
Ingredients
1/4 cup white wine vinegar
1/2 cup raspberries
1 1/2 tbsp honey
1 1/2 tbsp olive oil
1/4 tsp salt
Dash of fresh ground pepper
Method
Place all ingredients in a blender and blend until smooth.
Cinnamon pecans/Almonds
1/2 cup coarsely chopped pecans or almonds
1 Tbsp sugar
2 tsp cinnamon
Cinnamon Pecans/Almond
Toss pecans/almonds in a skillet over medium heat. Add sugar and continue to stir pecans until the sugar is melted. Sprinkle cinnamon over pecans/almonds and remove from heat. Immediately place pecans/almonds on a piece of tin foil to cool. The pecans/almonds will burn if they are left in the skillet.
