Ingredients
4 oz butter
4 oz sugar
1 egg
8 oz flour
1 tsp baking powder
A few drops of vanilla
A little milk
Caster sugar to dredge
Method
Cream butter and sugar together until soft and light in texture. Beat eggs in a bowl and add a little at a time and beat well. Stir in the flour and baking powder and vanilla. Add a little milk. About a tsp.
Roll out and cut with a cookie cutter, or roll up and slice or use a cookie press.
Bake in a moderate oven (190-200) for 10 – 15 mts. I take it out at 10 mts as it gets hard while cooling.
NB: You can use chocolate powder for chocolate cookies or half white/half chocolate cookies, use your imagination!! I rolled out a cholocalte pastry square and also rolled out a white pastry square, kept one on top of the other and rolled it together, hence the pinwheel effect of vanilla and chocolate cookies (Photo above)
