Bread Fish Buns/Malu Paan

Ingredients


For the bread dough

500 g Flour

2 Tablsp Sugar

50 gms Margarine

1 tablsp yeast

2 tsp lime juice/vinegar

2 tsp salt

1 1/3 cup lukewarm water

For the fish filling

Boiled fish or tin fish

1 Onion

3 Potatoes

2 Green chillies

a piece of Pandan leaves

a sprig of Curry Leaves

2 pips Garlic

Chili flakes to taste

salt and pepper to taste

A little oil for tempering

Egg yolk and a little water for egg wash

Method for the dough

Take a big bowl, add the flour, sugar, yeast and mix well. Then add the salt, margarine and lime juice, then mix together, add 1 cup of lukewarm water and mix with your hand. Then add the balance 1/3 cup of lukewarm water and mix well around 15 mts. If you have an electric mixer use the dough hook. Take another big bowl butter it nicely and put in the dough and cover with cling foil and keep in a warm place till well risen for 45 minutes.

For fish filling

In the meantime make the filling for the buns.

Boil fish with salt, pepper, turmeric, lime juice and water, then drain and lightly mash. Chop the onion finely. Boil the potatoes and mash them, chop the green chillies, crush the garlic.

Add the oil into a pan and temper the onions, chilli, Pandan leaf, garlic, curry leaves, then add in the fish and lastly add in the potatoes. Add chilli flakes. Fry and keep aside.

To make the fish buns

Take the risen dough onto a floured board, flatten out and cut pieces of around 100 gms if you want it all the same weight and size. Then flatten out or roll out with rolling pin into a circle, place 2 tablespoons of fish filling, then bring in the edges and pinch together to seal the base in the shape of a triangle.

After all the buns are made lay it on an oil paper in a baking tray and rub egg wash on each, Egg wash is egg yolk beaten with a little water.

Heat oven to 220°C before shaping the fish buns. Bake between 20-30 minutes till risen and golden in colour.
