Ingredients
Take bread, 1 day old is better
Enough milk to cover the bread
5 tablespoons Sugar
2 tsp Vanilla
2 eggs
Handful of raisins if you like
5 tablespoons sugar for caramel
Method
Break bread into pieces in a bowl and pour milk over it to cover, break eggs into a small bowl, beat with a fork and mix into the bread, add sugar to taste and add vanilla and raisins.
Take a Pyrex dish, put 5 tablespoons sugar and a little water and dissolve, then put in microwave on high for 3 to 5 minutes, see if it has caramelized if it has not put for another 4 minutes and then with gloves carefully turn it to coat bottom and sides of the dish. (if this is not possible put sugar in a saucepan put a little water, mix it and then keep on fire to caramelize. Do not stir with spoon. Then pour into a Pyrex dish)
Put in bread mix which has nicely soaked and microwave on high for 9 minutes.
Stove Top Steam Method
Or take saucepan without handles, put sugar caramelise, spread at the bottom of the pan, put bread mix and cover and steam on top of stove.
My mother used to turn the pudding upside down, cover it with strawberry jam, top it with meringue (stiff egg white) and place in oven under grill to brown.
