Breudher

Ingredients

For the bread dough:

350 g flour

1 tsp salt

1 egg

2 tsp sugar

2 tsp yeast

250 ml Luke warm milk


For the cake part:

3 eggs

175 g margarine

150 g sugar

100 g sultanas

1 tsp vanilla


Method

Add the sugar and yeast to warm milk stir and keep aside.

In the electric mixing bowl fix the dough hooks add the flour, salt and egg and mix a bit then lastly add the risen yeast mix stirred nicely to the flour mix a little at a time. Take either a glass bowl or stainless steel bowl, butter it and put the dough mix and keep aside till it doubles in size. Once doubled add back into mixer bowl add the eggs, margarine, sugar, sultanas and vanilla. Butter a Breudher Pan nicely, pour in the batter and cover with tea towel and keep aside till it rises again.


Put into 175°C pre-heated oven for 25-45 minutes, the toothpick should come out clean. Keep for 5 minutes and then un-pan onto a tray to cool.


*You could also rub oil into a silicon mould or cake pan pour the mixture into this.
