Butter Cake - Method 2 This quantity makes 2 lb


Ingredients

½ lb flour ½ lb sugar ½ lb butter ½ lb eggs (about 4 eggs) 2 tsp baking powder 2 tsp vanilla Add a little milk for dropping consistency


Method Set the oven to 190°C. Line a baking dish or springfoam pan square or round.


Beat butter and sugar till it creams. Separate the eggs and mix in one egg yolk at a time into the butter mix. Add the vanilla essence. Sieve the flour and baking powder three times and leave aside till needed. Beat the whites till stiff and fold in with the flour after all the egg yolks are used up. Bake at 190 °c for 40 minutes. Note: you can also beat in the full egg one at a time and beat well before adding the next egg Please note that even if you make only 1 lb quantity you still need to bake for 40 minutes
