Carrot & Mango Chutney

Ingredients

500gm carrots

1 large slightly ripe mango

2 green chillies

3 tbsp vegetable oil

1 inch ginger

1/2 a tsp allspice

1 tsp curry powder

Salt to taste

3 tbsp sugar

1/2 a cup of apple juice

4 tbsp vinegar


Method

Wash your jars and pour boiling water into them and have them ready.

Wash and grate your carrots. Wash and crush your ginger, Wash the mango and depending on how small you cut it they will cook faster. Add all your ingredients into a pan and keep on moderate fire. Once it starts getting thick off the fire and keep.

Pour into your sterilized jars and cap them.
