Ingredients
4 boneless, skinless chicken breasts
1 each - red, yellow and green bell pepper
2 cloves of garlic
1 teaspoon paprika
1 teaspoon dried thyme
Salt and pepper
1 cup cheddar cheese
1/2 cup parmesan cheese
3 tablespoons of olive oil
Finely chopped fresh parsley as garnish
Method
Preheat oven to 375°F/190°C.
Crush the garlic, slice the bell peppers thinly.
If the breast are very chunky cut into 2. Take a large bowl and combine the chicken breast, garlic, red pepper, thyme, some salt, (do not put too much salt as cheese has salt in it) black pepper and olive oil. Stir until chicken is evenly seasoned. Add the mixed bell pepper slices to the chicken mixture and mix well.
Spread the mixture evenly in a baking dish. Grate the cheddar and Parmesan cheese and sprinkle on top of the chicken bake.
Bake for about 30 minutes until the chicken is cooked through and the cheese is a melted and golden colour on top. before serving garnish with fresh parsley.
