Chicken Bake

Ingredients

Chicken breast or thighs

Small onions whole or large

Fresh Potatoes

Carrots

Beans

Capsicum chillies or peppers

olive oil

salt and pepper


Method

Set the oven at 180°C.


Take the amount of chicken and other ingredients according to your needs.

Wash and dry the chicken with kitchen towel. Keep whole or quarter the onions if large. Wash unpeeled potatoes and cut into large cubes o keep whole. Wash and cut carrots into large slices. Remove the strings of the beans and slice into half. Slice the peppers.


Put all the above ingredients in a aluminium foil lined baking dish, add the olive oil, pepper and salt, toss all together and bake for 45 minutes. Once cooked through place in serving dish.
