I tried this recipe from Bettybossi
Ingredients
300g of Penne Pasta or which ever is available
salt
water
1 tsp olive oil
4 chicken breasts
1 tsp salt
a little pepper
250 ml full cream
1 box of 400 g peeled tomatoes
pepper salt according to taste
1 bouquet of Flat Parsley
Method
Boil the pasta in salted boiling water, enough to cover the pasta, boil till Al dente - meaning slight bite to your pasta. Boil for around 8 minutes. It should not be too hard or too mushy. Strain reserving 200 ml of the cooked water before straining your pasta. see pink silicon cup in picture.

Take a pan and add the olive oil and when hot add the chicken breast (when you get older you do not like to eat a full breast so I cut it into slices) - cooking each side 1 minute and turning it over on the other side for 1 minute more, then reduce the heat and add pepper and salt and cook for 4 minutes more. Then wipe the pan with a paper towel and into this same pan add the cream and the pasta water, then add the peeled tomato and bring to a boil for around 10 minutes. Taste to check on salt and pepper. Add in the pasta and the chicken breast and off the heat of the fire. The sauce will get absorbed and dry up due to the heat. Do not keep it too long in the pan as it may get too dry. Put into a serving dish. Top it off with cut parsley.
