Ingredients
Chicken breasts
Soy sauce
Mirin
Sake
Sugar
Honey (optional)
Skewers
For the Teriyaki sauce
Add equal parts soy sauce, mirin, sake, and sugar. Mix all together.
Method
Take the unseasoned chicken cut into cubes and use a skewer to fix them together. Then baste with Teriyaki sauce and grill. Lay them on an oil paper on a tray and keep in oven with the grill on.
To tenderize and season the chicken all the way through, I brine it first in soy sauce and sugar then grill it and then rub coats of teriyaki sauce to finish.
