Ingredients
Seedless Grapes
Strawberries
Tinned Peaches
Tinned Pears
or any on your choice
for the cream
400g condensed milk (small tin)
400g heavy cream or (400g cream cheese if you prefer)
1 yolk of an egg
1 tsp Vanilla essence
for the ganache (for a harder topping)
200 g chocolate slab
200 g Heavy cream
(for a softer topping)
200 g chocolate slab
200 g cream cheese
Method
First wash all the fruits and keep to drain. Then cut the strawberries in small pieces, cut the grape in half and the peaches in pieces. I used tinned peaches and Pears. Place the fruits in a Pyrex dish.
In a pan place the condensed milk, heavy cream, egg yolk and vanilla essence, mix together and keep on low heat till it starts thickening. When it is bubbling and getting thick take it off the heat and stir nicely and pour this warm custard mix over the fruits.
Break the chocolate into pieces and place in a stainless steel bowl on a saucepan with water underneath. (Bain marie) warm till chocolate starts to melt. Take off fire and add in the heavy cream and give a nice mix. (The chocolate could also be put in a microwave dish and stirred in 1 minute intervals till chocolate has melted) Pour over the cream and fruits and level out the chocolate on top.
Keep in fridge overnight and serve when chilled
NB: remember that you can choose any fruit combination that you want. It could be mango, peaches, apples, grapes, blueberries, strawberries and much more.
NB: If you prefer a softer chocolate topping, use 200g chocolate bar (warm in microwave or bain-marie) and add 200g cream cheese and mix, pour onto custard - this will be a softer chocolate and wont set.
