This recipe is from my mother in law Sama Aluwihare – This quantity makes 1 pound of cake. I double it up
Ingredients
2 ½ oz flour - 5 oz for dbl qty
4 oz sugar - 8 oz
4 oz butter - 8 oz
2 tsp baking powder - 4 tsp
2 Eggs - 4
1 oz Chocolate/Cocoa powder - 2 oz
½ oz cornflour - 1 oz
A little milk for dropping consistency
NB: instead of ½ oz corn flour use 3 ½ oz flour
Method
Preheat oven to 180°C. Butter and line a 8inch square baking tin.
Beat the butter and sugar till it creams add egg yolk - separately beaten. Sieve flour, cocoa powder, baking powder and corn flour and sieve 3 times and add to cream. Beat the whites together and fold in with the flour. Pour into baking dish and bake in moderate oven for 40 minutes. Turn out onto cooling rack, do not keep in baking dish as it dries out.
Icing
3 oz butter
5 oz icing sugar
1 oz Chocolate powder
1 tsp vanilla essence
1 Tbsp milk
Method
Cream butter then add icing sugar and chocolate powder sieved together. Beat on low speed.
Then add vanilla essence and milk if you need a dropping consistency.
