Chocolate Cup Cakes - another method

makes 12-14 cupcakes

Ingredients

125 g all purpose flour

40 g cocoa powder

1/4 tsp salt

1/2 baking soda

1 large egg

200 g sugar

120 ml butter milk

80 ml vegetable oil

120 ml coffee

1 tsp vanilla extract


Method

Pre heat oven to 350°F, line a cupcake pan with liners. In a bowl sift flour, cocoa powder, salt and baking soda, add sugar stir and keep aside. In a separate bowl whisk all wet ingredients. Add dry ingredients and mix just until combined, do not overmix. Scoop the batter with an ice cream scoop into the liner set in a muffin pan or cupcake machine. Bake for 18 to 20 minutes or till toothpick comes out clean. Allow to cool on cooling rack completely before frosting.
