This can be used for your Christmas cake.

Ingredients
620 g Chow Chow fruit
525 g sugar
1 tsp salt
250ml water
Method
Peel off skin of chow chow fruit with a vegetable peeler. Then cut into small squares or pieces, take a heavy bottomed pan and put in the water, sugar, salt and chow chow and cook on medium heat for about 1 hour.
You can strain the syrup and use the pieces only in your Christmas cake or if you want to keep longer put into a sterilized Jar and pour in the syrup.
The Syrup can be used for any other items that you are cooking and need syrup. I added the left over to my bread pudding.
NB: The less water you put the thicker the syrup
