I got inspired by watching YouTube with Pittu being made without a Pittu Steamer (Mould)
Ingredients
1 1/2 cups roasted rice Flour
2 cups grated coconut
1/2 cup cooked rice
salt
water
Method
Do not panic if you do not have rice flour at home, you can use normal flour but put it in a pan and roast it a little. The rice flour version is much healthier. I had one cup rice flour and the balance I put normal flour and roasted both.
Take a bowl and add the grated coconut, salt and cooked rice. then add in the roasted rice flour and mix with an addition of a little water at a time, till it resemble bread crumbs.
If you don't have a Pittu steamer you can use a saucepan which has holes in it (steamer) and a saucepan to hold the water. (Like a bain-marie)
Use a small tea towel at the base of the steamer, I then cut circles of oil paper to fit the cup I used to shape the pittu in. Once you press the pittu mixture lightly into the cup, cover with oil paper and turn it upside down carefully on to the tea towel. Keep on top of the pan with the boiling water and steam for around 10 minutes.

Roasted rice flour added to cooked rice and grated coconut and turn out onto a tea towel.
Then carefully lift it on to a serving dish. once it is cool you can remove the oil paper from underneath the pittu.
It can be eaten with any Chicken/fish/Beef curry/Kiri hodi (gravy made with coconut milk) Lunu Miris (chili sambal) or even sugar!!
