Melted butter sponge
This quantity makes 1 ½ pounds of cake + 2lbs with icing
(18 eggs makes 6 lbs 4 oz with icing)
Ingredients
6 oz flour
9 oz sugar
4 oz butter
2 tsp baking powder
6 eggs
2 tsp vanilla
A pinch of salt
2 Tsp Nescafe dissolved in a spoon
of hot water
Method
Set the oven to 375-400 or (190-200). Grease and flour baking tin. Melt the butter in a pan & let it cool. Sieve the flour and baking powder 3 times and leave aside till needed. Separate the whites from the yolks and beat up the whites with a pinch of salt till nearly stiff, now add the sugar gradually till all the sugar is used up. Add one egg yolk at a time and beat well after each addition. Add in Vanilla and coffee. Now fold in ½ the flour and ½ the butter and when that is mixed lastly fold in the rest of the flour and butter, do so lightly and gently - pour at once into the prepared tin and bake for 40 mts.
once cooked gently turn over onto a cooling rack.
Cover and sandwich with coffee butter cream icing
You can decorate the sides of the cake with either roasted cashew nut pieces or crushed nougat or various other ideas. The coffee you add can be intense coffee taste or lighter as per the two pictures of coffee butter cream icing above.
