this quantity makes two pounds
Ingredients
½ lb flour
½ lb sugar
½ lb butter
½ lb eggs (about 4 eggs)
2 tsp baking powder
1 tbsp Nescafe dissolved in 2 – 3 tbsp of hot milk
Add a little milk for dropping consistency
Method
Beat butter and sugar till it creams. Separate the eggs and mix in one egg yolk at a time into the butter mix. Add the vanilla essence and add the coffee essence. Sieve the flour and baking powder three times and leave aside till needed. Beat the whites till stiff and fold in with the flour after all the egg yolks are used up. Add a little milk for dropping consistency.
Bake at 180 c for 25 minutes
Note: you can also beat in the full egg one at a time and beat well before adding the next egg. Also with the last egg add a little flour so it does not curdle.
Coffee Icing
Method
3 ozs Butter
5 0zs Icing sugar
1 tsp vanilla essence
2 tsp instant coffee mixed with 1 tsp hot water
Method
beat butter till creamy, add in icing sugar gradually and then the vanilla and coffee.
