Crispy Egg Plant/Aubergine recipe

Ingredients

2 large aubergines/eggplants

1 tsp corn starch

3 tsp water

 

Oil for deep frying

 

1 tsp red chilies

1 tsp garlic

1 tsp ginger

2 tsp light soya sauce

2 tsp vinegar

1 tsp sugar

1 tsp oyster sauce

3 tsp water

1 tsp cilantro

1 tsp white sesame seeds

 

Method

Wash and slice the aubergines in half and then slice lengthwise and then slice thin rounds or slices.

Deep fried Aubergine



 In a bowl add the water and cornstarch and mix well and then add the aubergine and mix well.

 

Either in an deep fryer or on the stove warm the oil in a saucepan at around 250°C fry the aubergine till golden-brown. Now drain and keep aside till needed.

Take a bowl add the soya sauce, vinegar, sugar, Oyster sauce and water mix nicely and keep aside till needed.


Heat a pan with a little oil and add in the red chili slices or pieces and the garlic and ginger crushed/minced. Then add the made sauce to the chili garlic and ginger. Cook till it starts bubbling and then add in the fried aubergine, add cilantro and white sesame seeds and toss well.



Now it is ready - really delicious!!
