Easy Strawberry Dessert

Ingredients

400g Strawberries

15g Gelatine powder

25 ml water (add more if not liquid)

500 ml whipping cream

130g Icing sugar

10g hydrated gelatine, add a little water to mix

200ml milk

100g sponge fingers


Red food colour optional!

 

Method

Line a baking tray with bubble wrap.


Wash remove leaves and cut strawberries into pieces.



Put strawberries into a bowl and hold handheld blender, blend and put a little puree into a small bowl and keep aside. Take a little more puree and add the hydrated gelatine (Soak the gelatine in water and mix well) and add to the puree in small bowl, mix well and add to big strawberry puree, stir well and pour into prepared bubble wrap mould. Place in fridge for 30 minutes.



Into a bowl add liquid cream and powdered sugar. Beat with handheld electric mixer for firm consistency. Add the strawberry puree which u kept aside n mix well. Set aside a few tablespoons of the cream.

 

 

Add the hydrated gelatine n mix gently. Add to bowl with cream and mix well with whisk. It will turn pink colour. Now spoon the cream on top of the strawberry puree. Flatten out.

HOLD IT RIGHT THERE!! Here is where it went wrong - The Cream had expired the day before and I foolishly used it!!! NEVER, NEVER use cream even if a day old! Especially during summer. YOU CAN SEE THE CURDLED UP CREAM!!

So next step throw it away!! Now quick use your imagination and do something. Next step of this : Luckily I made only a small box!!

So I made a quick strawberry Jelly from one packet and whist it was cooling I added the milk in a bowl and added the ladies finger(sponge fingers) one at a time and took out the set strawberry tray from fridge and placed the fingers on top of the strawberry puree.


once the jelly was cool I poured it on top of the fingers and kept it to put in fridge for 2 hours - et voila dessert was ready but not what I was expecting!!!


Turn over and remove bubble wrap. View from top and side. I suggest you add a few drops of red food colour to your strawberry mix. so it would not be pink colour.
