Fluffy Pancakes

Ingredients
2 eggs
45 g sugar
180 ml Milk
10 ml Vegetable oil
4 ml lemon juice
200g Cake flour (I used all purpose flour)
10 g baking powder
Method
Take a bowl/liquidizer add the milk, sugar, oil, lemon juice and eggs and mix well. then
add in the flour and baking powder, give a few swirls till mixed. Do not over mix. As usual forgot to take photos of the balance thick pancakes!!

Take a non stick mini pan for pancakes and brush the pan with veg. oil. Keep fire on low and heat till bubble appear on surface, turn over and continue to cook.

With this quantity I was able to make 10 pancakes small and thick. We had it with Caotina Chocolate spread and strawberry jam.

With the balance I added a little more milk and make another 12 pancakes which I layered and placed vegetable filling on top, added gratin between layers and topped off with Edam cheese and made a pie. Bake at 180°C for around 10 minutes till golden brown on top.
