Fluffy Pancakes

with stewed cherries, stewed Peaches and custard!!

Ingredients
2 cups all-purpose
1/4 cup granulated sugar
4 tsp baking powder
1/4 tsp baking soda*
1/2 tsp salt
1 and 3/4 cups milk
1/4 cup/ 57 gm butter
2 tsp pure vanilla extract
1 large egg
Method
Take a large bowl and add the flour, sugar, baking powder, baking soda and salt. Mix together with a plastic wire whisk. Melt the butter and keep aside. Then make a well in the center and add in the milk, slightly cooled butter, vanilla and egg.

Slowly fold the wet ingredients into the dry ingredients. Mix together until smooth.
The batter will be thick and creamy in consistency. If the batter is too thick add a little milk to make it less thick. Allow the batter to rest whilst heating up your fry pan over medium low heat. Lightly grease your pan and pour in 1/4 cup of batter using your measuring cup.
Spread out gently into a round.

When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
Serve with honey, maple syrup, fruit, ice cream or frozen yoghurt, or enjoy plain!
