Fruit cake

Ingredients

180g Butter

150g Sugar

1/4 tsp Salt

3 Eggs

180g Sultanas

75g orange peel

75g Lemon peel

75g candied cherries

40g dried cranberries

2 tbsp Raspberry jam

225g Flour

1 teaspoon baking powder


Method

Line a cake tin of approx. 28 cm. Set the oven to 180°C.


Mix the butter in a bowl until soft, stir in the sugar and salt. Stir in eggs one at a time, continuing to stir until the mixture is lighter in color.



Chop the cherries into quarters. Mix the sultanas and all the other dried fruits, stir nicely then mix in the raspberry jam. Don't panic if you don't have all these dried fruits with the correct weight, just add whatever you have.


Mix flour and baking powder. Then pour the cake mix into the prepared pan and put into preheated oven


First bake for 45 minutes in the middle of the oven and after that cover with aluminium foil and bake approx 25 minutes. Test with toothpick if cake is baked.


Take cake out of oven and turn out onto a cooling tray.



When cool, wrap in aluminium foil and store.


NB: my cake is thin as I also made 6 cupcakes with the same batter!!
