Fudge Frosting

Ingredients

2 cups granulated sugar

1 cup unsweetened cocoa powder

1 cup milk

1/2 cup butter

1/4 cup light corn syrup -I substituted with sugar syrup**

1/4 tsp salt

2 tsp vanilla

2.5 to 3 cups icing sugar



Method

in a large saucepan mix the sugar ad cocoa. Then add in the milk, butter cut into cubes sugar syrup and salt. Heat till boiling stirring frequently. Boil for three minutes and stir occasionally.

Keep to cool for 45 minutes.


All ingredients heated Keep to cool for 45 minutes add Vanilla and Icing Sugar


Beat in the vanilla and icing sugar till you get a spreading consistency. You could use this to frost 2 x 9" two layer cake.

** how to make sugar syrup

Combine 1 cup of pure cane sugar with 1/4 cup of water and heat over a low flame. Cool and use directly in a recipe. - so use this instead of corn syrup.
