Ginger Beer recipe given by Yasanthi Aluwihare tried and tested – makes up to three litres

Ingredients
100 gm Ginger
400 gm Sugar
2 Lt boiling Water
½ cup lime or lemon juice
extra boiled cooled water
Lemonade or sprite optional
Sterilized bottles
Method
Wash ginger till clean, scrape of skin with a teaspoon and grate or grind. Add the sugar and ginger into a saucepan and add the 2 Lt boiling water on top of this (like pouring tea). Give it a good stir, cover and keep to cool till Luke warm. Then add the lime or lemon juice and stir. Keep to cool down then strain with a fine strainer and bottle. This mixture is concentrated. The Ginger Beer can be kept in freezer and in the fridge. Keep at least 2 or 3 days before consuming. Add water or lemonade to dilute when serving
