Ginger & Mango Relish

Ingredients

4 cups mango (fresh or frozen)

3/4 cup granulated sugar

2 inch piece of ginger

3/4 cup golden raisins

1/2 cup red bell pepper

1/2 cup onion



Method

Wash and peel the mango and cut into small pieces. wash and crush or grind the ginger. cube the bell pepper and dice the onion. Add the ingredients to a large saucepan then add in the raisins and sugar.

Place the saucepan over medium-high heat and bring the mixture to a boil. Once it starts to bubble, reduce the heat to medium and simmer until it starts to thicken. Make sure to stir frequently to prevent the bottom from burning. It should take 20 minutes.

Pour boiling water into jars and prepare them before the Relish is made. Pour the hot Relish into the bottles, put a piece of parchment paper under the lid and close tight.

Sealed and ready for fridge

NB: if you don't want big pieces you can use your hand held blender and blitz it. This goes nicely with plain rice or can be used as a dip. You could add chili if you prefer your relish spicy.
