Green Gram/Mung Bean Sambal

Ingredients
4 tbsp of Coconut/Olive oil
A sprig of curry leaves
2 green chilis
1 large onion
1/2 tsp of Turmeric powder
1/2 tsp mustard seed
1/2 tsp of chili flakes
1 cup boiled green gram
3/4 cup of fresh/desiccated coconut
Salt/Pepper to taste
Juice of half a lime
Method
Slice the onion, cut the green chilies.

Place a frying pan over medium heat. Place the oil in the pan and when hot add in the curry leaves, green chili, chopped onions, turmeric, cook the ingredients until onions turn golden for around 3 minutes.

Then add the mustard seeds cook until they pop and add the fresh coconut to the pan.
Add the chili flakes, mix in the fresh coconut with the ingredients. Cook until the moisture on the coconut has been absorbed.

Now add in the boiled Green Gram to the pan, mix and season with salt, continue cooking until all ingredients are well combined.
Remove the pan from the stove, taste to see if there is enough salt and pour in the lime juice.
NB: This can be eaten for Breakfast or as a side dish with your lunch!
