Ingredients
For the cake
125g plain flour
100g granulated sugar
25g cocoa powder
2 tsp baking powder
½ tsp salt
60 g butter
175 milk
For the sauce
100 g granulated sugar
100g light brown sugar
20g cocoa powder
300 ml boiling water
Fresh Cherries - de-seeded (You can use any fruits of your liking or bake plain with no fruits)
Needed
You can use a rectangular dish (11”x7”) or a round dish
Method
Set oven to 160 °C.
Melt butter in microwave and keep aside. Into a bowl add the cake ingredients and melted butter and mix together. Put the cake batter into a dish and flatten out. I took off the seeds of the cherries and placed them on top.
In another bowl add the sauce ingredients except the water and mix together. Then pour the sauce powder to cover the batter and pour boiling water gently on top of the whole cake and bake for around 35 minutes. Since I added fresh cherries it was more damp so it took almost 1 hour to bake. When you see the cake on top and no more wetness the cake is ready.
When ready the underside is moist and gooey and warm. So scoop out the dessert and add a scoop of Vanilla ice cream! Very yummy!!
