Lemon Extract
Ingredients
I used 13 Lemons although
you could use 1-2 - whole large organic lemons
3/4 cup Vodka or enough to cover the peel
Glass bottle with lid or cork
Method
Wash and dry fruit thoroughly before peeling off the thin outer layer. Take a peeler and slice off the outer layer, If any white pith remains, slice it off with a paring knife as they tend to add bitterness. Fill the bottle with peels and cover completely with vodka. Seal well and place in a cool, dark place.
Shake the bottle gently once a day for about 3 days. Taste if it is ready after a week or continue to steep longer.
NB. I Used Bio or organic Lemon fruits as we do not want them to be treated with pesticides.
If your extract tastes bitter strain it if needed. After some time strain out the peel and keep the essence intact.
You can make use of your extracts in either cakes, sorbets, cocktails etc.
