Kalu Dodol - made in microwave

This is a sweetmeat that is made with Jaggery from a Palm tree. Dark brown in colour

Jaggery is made by evaporating the water from sugar cane juice or palm sap. It is sold as a block, liquid or granules.



Ingredients 1/2 cup unroasted rice flour 350 grams Jaggery (from a Palm tree) 1/4 cup white/ brown sugar(if you use Molasses instead of sugar you will get a darker brown/Black Dodol) 550 ml thick coconut milk 1 teaspoon powdered Cardamoms Cashew nuts Method In a large microwave proof bowl add scrapped Jaggery, sugar and coconut milk and mix it well until all Jaggery has dissolved. Add the rice flour and mix well without any lumps. I used a bar mix.


Add powder of cardamoms. Mix well. Microwave for 10 minutes. Remove and mix it well with a silicon spoon. Return to the microwave for another 5 minutes. And remove and mix well and add the Cashew nuts. Return again for another 5 minutes and now when it is really thick and you can see the oil coming out. Mix well and return to the microwave for another 2 minutes and remove (it took a total 22 minutes – it may vary depending on your microwave) and pour into a tray greased with ghee. Spread it quickly and leave it to cool for a couple of hours and cut into pieces. After some time you could see a little oil seeping out as should be.
