Kokis or a Crispy savoury biscuit

Ingredients

1 cup Rice flour

¾ cup Wheat flour

1 thick cup Coconut milk

Pinch Salt

1 tsp Cumin seeds

Pinch of saffron

Egg (optional)

Vegetable oil for deep frying


Mould for Kokis or fried cookies - to be used as shown below - there are many shapes an sizes for this mould. Some are made with cast iron and some with non stick. To season the mould dip it for a few minutes into medium heat warm oil.

Method Mix 1 cup rice flour to ¾ cup wheat flour

Pour in 1 cup thick coconut milk, salt, pinch of saffron and 1 tsp cumin seeds. Mix to make a thick batter and leave aside.

Heat the oil in a fry pan, when the oil is hot put the mould inside the oil and then dip it in the batter just to coat the sides, when you lower it into the boiling oil and it starts bubbling take a chopstick and loosen the edges, then this comes out of the mould and you can take it out with the same chopstick and put to drain. Store these in an airtight container and it will last for weeks.

You can add chili powder, cheese, boiled and mashed potatoes or any other addition to this mix. Do not despair if it does not come out in the first attempt – you will get there!!
