Mango Cake


Ingredients

250 gm flour

2½ tsp baking powder

5 eggs

250 gm sugar

250 gm butter

Vanilla

Milk a little 250 gm fresh mango peeled and chopped into small pieces Cook with a bit of sugar

Method

Preheat oven to 180°C, Butter and line a 9" square baking tin.

Cream the butter and sugar together. Then add an egg at a time and beat then mix in the sieved flour/baking powder and the slightly stewed and cooled mango pieces. Add a little milk to get a dropping consistency. If there is enough syrup in the mango you need not add milk.

Bake for 40 minutes. You can also decorate with almond slices.


NB:This cannot be kept for long as the mango gets rancid after around 3- 4 days.


Mango frosting

85g Butter

141g icing sugar

There should be a little Bit of juice

Two fresh mangoes chopped fine for decoration, Add Almond slices to decorate and decorate as desired


Method

For the icing – cream together a bit of icing sugar and butter, put in a little stewed mango without the juice and mix. Ice the cake and on top place chopped mango pieces
