Mango curry

Ingredients

2 cooking mangoes

1 Onion

2 pips garlic

2 Cloves

2 Cardamoms

a sprig of Cinnamon

1 tsp Mustard seeds (as you can see I added a little bit of cumin and fenugreek too) You can add what ever you like!

a hand full of Curry leaves

a few Pandan leaves

2 tsp Chili powder

1 tsp roasted curry powder

1 tsp saffron

1/2 tsp pepper powder

1 tsp salt

Brown Sugar to taste


a little oil for tempering


Method

Wash mango and cut lengthwise. You could also put in the seed. I like my mangoes with the skin on so when it is boiled you can eat with the skin. But my husband prefers it without the skin. Even if one cooking mango was ripe it was very sour.



Cut the onion, garlic. Put in a bowl and marinate with chilli powder, vinegar and all the ingredients except the oil and mustard seeds.



In a pan put a little oil and heat this. Into the hot oil add the mustard seeds till they spit.

Then add the mango mix and cook on a low fire add a little sugar towards the end. Add a little water. Take off heat when the curry gets thick.



NB: Always remember add what you have - and it is ok to omit some ingredient if you don't have it!
