Marshmallows with 2 Ingredients

Ingredient

320 ml/ 1 ¼ cups - Strawberry Syrup

8 Gelatin Sheets – you can substitute powdered Gelatin if you don’t have Gelatin Sheets

(Substitute 1 tbsp of powdered gelatin for every 3 gelatin sheets).

So I used 2 Tbsp and 1 tsp of Gelatin Powder.

 

Method

I took a dish and lined it with parchment paper and kept it till needed.

 

Bloom the gelatin sheets in a small bowl, cover with cold water and let them sit for 5 minutes to soften.  Gently squeeze any excess water from the softened gelatin and add to syrup and mix well.

Or put the gelatin powder in a bowl and add a little cold water to cover the gelatin, stirred it and kept it to bloom for 5 minutes.

Marshmallow tripled in size

I then took a saucepan and added the Strawberry Syrup. Kept it on medium heat till it started simmering and then I added the bloomed Gelatin. Mixed it till all the gelatin was dissolved and poured it into a hand mixer with a large bowl.

 

I beat on high speed for 5 – 7 minutes or till it tripled in size and is light and airy. Then I poured the whipped marshmallow mixture into the prepared tin and kept it in the fridge for around 3 hours. You can keep it longer if you want it to set more. Wet a spatula and rub on top of the mixture to flatten it out.

When set turn out onto a board/plate with half and half corn-flour and icing sugar sifted together. When slicing into pieces wet your knife in hot water for easy cutting.

After coating your marshmallows in 50- 50 icing sugar and corn-flour put into airtight containers or zip lock bags. If you have desiccant packet put into the container of your marshmallows as this will absorb excess moisture.


Keep inside the pantry cupboard away from the heat. Do not re-put in the fridge as it will start sweating.
