My mother Angela Wijetunge's recipe
This quantity makes 1 ½ pounds of cake. + 2lbs with icing
(18 eggs makes 6 lbs 4 oz with icing)
Ingredients
6 oz flour
9 oz sugar
4 oz butter
2 tsp baking powder
6 eggs
2 tsp vanilla
A pinch of salt
2 tsp lime juice
Pink or green food colouring
if you like
(If it is a chocolate cake instead of lime juice add cocoa powder into the flour or if it is a coffee cake use 2 tsp of Nescafe powder dissolved in a bit of hot water)
Method
Set the oven to 375-400 or (190-200). Grease and flour a 10in" baking tin.
Melt the butter in a pan & let it cool. Sieve the flour and baking powder 3 times and leave aside till needed. Separate the whites from the yolks and beat up the whites with a pinch of salt till nearly stiff, now add the sugar gradually till all the sugar is used up. Add one egg yolk at a time and beat well after each addition. Add in Vanilla and lime juice. Now fold in ½ the flour and ½ the butter and when that is mixed lastly fold in the rest of the flour and butter, do so lightly and gently - pour at once into the prepared tin and bake for 40 minutes.
Add pink or green colouring as desired.
Icing
3 oz butter
5 oz icing sugar
1 tsp vanilla essence
1 or 2 drops Pink or green colouring for ribbon cake
2 tsp coffee for coffee cake or cocoa powder for chocolate cake
Method
beat butter till creamy, add in icing sugar gradually and then the vanilla and colouring of your choice.
