Ingredients 85 gs Demerara (Brown) Sugar (cassonade in French)
1 tsp ground ginger
½ tsp grated nutmeg
1 stick cinnamon
70 cl bottle of red wine
8-12 cloves
1 orange
300 ml water
star anise (optional)
vanilla pod (optional)
Method
Put the water and the sugar in the pan along with the ground ginger, nutmeg and cinnamon stick and stir till it gets the consistency of syrup. Bring to the boil once and then add the wine the orange studded with cloves and if you like you could add star anise, ½ vanilla pod, simmer for 5 minutes and the wine is ready.
You could also squeeze in some orange juice and a wedge of orange or nectarine. Strain before use.
Note: If you boil the wine the alcohol in it will be lost.
Tip: If you are transporting the wine first pour boiling water into the flask warm through then throw out water and fill with the hot wine.
