Ingredients
2 Clementines
1 Lemon
150 g Brown sugar
a 1" piece of ginger
1 cinnamon stick
15 cloves
2 bottles of red wine
Method
Grate zest then peel and drop the bics and rind of one clementine in a pan. Then take the other clementine grate the rind and prick 15 cloves into it and drop in the pan.
Add the grated lemon rind, cut fruit in half and drop it into the pan. Then add 150 g of sugar. Take the skin off the one inch piece of ginger cut into half and add that into the pan. Break the Cinnamon stick in half and add that.
Then add 2 bottles of red wine.
Boil on low heat for 15 minutes covered. Strain and serve.
Note: If making ahead, remove from fire after 15 minutes and keep aside. When your guests arrive, you can reheat and serve with a cinnamon stick in each glass for decoration.
