my sister Kissan’s method
Ingredients
300 g Flour
1tsp baking power
½ tsp baking soda
Salt a pinch
200 g butter
2 eggs
225 g sugar
2 tsp vanilla or coffee essence
1 cup yoghurt
2 Tbsp Nescafe powder
1 tbsp hot water
Method
Preheat oven to 350F/180C. Grease 26 cm tin. Sift flour, baking powder soda bicarb, salt and keep aside. Beat butter till creamy and sugar gradually on high speed. Add eggs gradually and vanilla and coffee. Add flour mix gradually and alternately beat with yoghurt and keep mixing with butter and egg batter on low speed but don’t over mix.
In another bowl dissolve Nescafe in hot water add and mix 1/3 of the batter. Pour ½ the remaining batter into the pan, smooth and pour Nescafe batter on top and top off with the balance batter. Bake for 50 minutes or golden.
