Strawberry could be made like this too.
Ingredients
1 can cherry pie filling (you can also make this – see recipe below) or use strawberries instead
1/2 cup butter
16 ounces Sour Cream
8 ounces Cream Cheese
16 ounces marshmallows
2 regular sized ready graham pie crusts
or make your own -
(see recipe below)
Method
In med-large bowl mix together sour cream and cream cheese with mixer until smooth and set aside.
On stove top melt stick of butter and mix in marshmallows little at a time until smooth.
Quickly add marshmallow mix into the sour cream-cream cheese mix and quickly mix those together.
Pour equal amount of “batter” into each of the ready pie crusts. Cover the pies with the cling film. Place in fridge overnight.
Once pie is firm you may top with cherry pie filling or any other fruit you may want to top the pie with
Homemade Cherry Pie Filling
Ingredients
3 cups fresh pitted cherries
1/2 cup water
1 tablespoons fresh lemon juice
2/3 cup granulated sugar
2 tablespoons corn starch
1/4 teaspoon almond extract
Method
Use a cherry pitter to removed the seeds from cherries.
In a saucepan over medium heat, combine cherries, water, lemon juice, sugar and corn starch. Bring to a boil. Reduce heat to low and cook, stirring frequently, for about 10 minutes. Stir in almond extract. Cool before using as a topping.
Home made pie crust base –
Ingredients
250g packet Nice Biscuits or other plain biscuits, crushed.
125g butter, melted –
Method
In a large bowl, combine biscuits and butter. Press firmly into prepared dish bottom opened ring as shown in picture above. Chill 20 minutes, until firm.
On another occasion as show in the picture above I have used Oreo cookies as the base for a darker layer.
