Olive Pickle - (Veralu Achcharu)

Ingredients

Unripe Olives

1 pinch of Saffron

Water

1 tsp Chili powder

1 tsp pepper powder

1 tsp sugar

1 Tbsp Ground Mustard paste

1 Tbsp Vinegar

salt to taste


If you like it more spicy add more chili powder!!











Method

Take a saucepan, add the unripe olives, the saffron and water to cover the olives and boil on a slow fire. Do not add salt whilst boiling as it will take a long time to boil.



Once the olives have split drain the water, and mash the olives with a spoon or by hand.

Then add the other ingredients and mix nicely. Bottle it and keep for a few days before you enjoy it.



NB: you can add dates smashed too if you like, or it can be stuffed with pineapple pieces.


Ash plantains cut into cubes and deep fried can be made into a pickle with red onions and green chilies.
