Ingredients 2 eggs 1 and 3/4 cups sugar 2 heaped tsp powdered cinnamon 1/2 cup oil 6 medium Gala Apples 2 cups all purpose flour 2 tsp baking soda
Method
Preheat oven to 350°F/175 C°
In a large bowl, mix the eggs, sugar, cinnamon and oil.
Then peel and slice the apples (I cut chunks) and add to mixture in bowl - keep coating in the oil mix to keep the apples from turning brown. Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well with a fork until all of the flour is absorbed by the wet ingredients.

Pour mixture into a greased 9" round Pyrex dish. Bake for approximately 55 minutes.

NB. If the top is getting burnt reduce the heat of your oven.
This should go well with custard or Crème Anglaise - the pouring kind!!
