Onion Sambal - Seeni sambal


Ingredients

1 kg of Bombay onions, finely chopped a few chopped Pandan leaves

2 inches of lemon grass

a handful of curry leaves 3 pieces each of Cloves, cardamoms, cinnamon 4 pips of Garlic finely chopped

Vegetable Oil for sauté


to your taste add

Salt

Chili powder

Chili pieces A little sugar Tamarind paste Maldive's fish pieces


Method

Heat oil in a wok like pan, add the onions and fry till almost turning brown then add in all the ingredients and stir fry till onions turn golden brown. Then add salt, chilli powder and chilli pieces. Sugar, tamarind, Maldive Fish pieces and keep stirring till dry.


NB: Some people make it darker than this, some deep fry the onion - each to his own!!
