Ingredients
1 Large Aubergine
1/2 tsp turmeric powder
1 large bombay onion
3 large tomatoes
handful curry leaves
2 green chilies
2 pips garlic
1/2 tsp chili powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp paprika
salt to taste

Method
Wash and cut the aubergine into round and then cubes. Sprinkle a little turmeric powder and salt on the aubergine. Then put oil into a pan and pan fry the aubergine.
Chop the onions, green chilies, add the curry leaves, chopped garlic and tomatoes. Once the Aubergine is fried through add in the balance ingredients with the chili, coriander, cumin and paprika powder, add salt to taste.
Once it is cooked there with be a little thick sauce/gravy.
As I had no more room in my freezer I placed them in food bags, labelled them and put in freezer. Et Voila anytime you need a pan fried aubergine it is ready!!
This is a real rice puller or can be eaten with hot hot bread.
