Ingredients
250 g flour
50 g butter
¼ tsp Salt
1 egg Yolk
4-5 tablespoons ice water
Method
sieve the flour into a bowl, grate the cool butter into the flour, then mix together till it resembles bread crumbs, beat the egg yolk with a little water and add the salt and then gradually add the ice water till you get a dough. Roll out the dough and place in a cling film and put into the fridge till you are ready to use it.
For the filling
Ingredients
Either Fish/Chicken /mince beef/vegetable
2 potatoes
1/2 big onion
Curry leaves
2 green chillies
1/2 tsp pepper powder
1/2 tsp chili powder
1/2 tsp unroasted curry powder
Ginger/Garlic paste
salt to taste
2 cloves/powder
2 cardamoms/powder
a piece of cinnamon/powder
juice of 1/4 lemon/Lime
2 tbsp oil for frying
Method
Wash the chicken well with slat water and keep on fire with a little water. when boiled, cut into small pieces. Boil the potatoes and mash them. Put the oil in a pan and fry the onion, curry and chilli powder, garlic ginger paste, curry leaves and fry, now add the potatoes and chicken and mix nicely. taste for salt. Add the lemon/lime juice.
NB: You could also use mince beef/ fish/vegetables.
When your filling is ready roll out the dough on a floured board and cut circles with a
Patty mould. Place the mixture or filling in the centre. With a little bit of water rub the edges, close the circle in half. These are called Patties, you can either deep fry them till golden brown, do not put into boiling oil. use a draining spoon to take them out and put onto a strainer to drain, put a piece of paper towel under the strainer. Or else you could give an egg wash (egg beaten with a little water) and rub with a brush on top of the patty and put on a baking tray covered in parchment paper and bake at 175c° for 25-30 minutes.

This could even be deep or air fried.
