Ingredients
2 (3 ounce) packages of peach flavoured Jelly
3 1/2 cups boiling water (total needed)
1 1/4 cups cold water
3/4 cup cold water and peach schnapps(optional) (non-alcoholic version)
2 cups peaches, sliced and pealed, or drained canned peaches
2 tablespoons
(2 envelopes) of gelatine powder
1 1/2 cups (14 ounce can) sweetened condensed milk
Method
Empty both packages of peach jelly into a bowl. Stir in 2 cups of the boiling water until the jelly is fully dissolved. Stir in 3/4 cups of the cold water and the peach schnapps.(Optional) Refrigerate mixture until thickened. If using canned peaches, drain well. Arrange some of the peach slices in a formation in the bottom of a 9-cup mould. Reserve remaining peaches for later use. Spoon thickened peach jelly into the mould over the arranged peach slices. Refrigerate until jelly is set but not firm.
Meanwhile, in a separate bowl, sprinkle gelatine over 1/2 cup of the cold water and allow the gelatine to absorb the water. Stir in 1 1/2 cups of the boiling water until gelatine is fully dissolved. Stir in sweetened condensed milk until the mixture is smooth. Refrigerate mixture until slightly thicken. Chop up any remaining peach slices and fold into sweetened condensed milk mixture. Gently spoon over the top of the peach jelly layer. Refrigerate until firm. Unmould and serve either with custard or with peach coulis.
